To maximize freshness, they should be kept in a breathable container, such as a paper bag, which allows airflow and prevents moisture buildup. If you can’t use them within that time, you can extend their shelf life by drying or freezing them, which allows them to last for several months.
Freezing Lion's Mane mushrooms is a great way to extend their shelf life. Here's how to do it properly:
Clean the Mushrooms: Gently brush off any dirt or debris from the mushrooms. Avoid washing them with water, as excess moisture can affect their texture once frozen.
Slice the Mushrooms: Cut the Lion's Mane into slices or pieces based on how you plan to use them later.
Blanch (Optional): To help preserve texture and flavor, you can blanch the mushroom slices. To do this, bring a pot of water to a boil, then drop the mushrooms in for about 1-2 minutes. Afterward, immediately transfer them to a bowl of ice water to stop the cooking process.
Dry the Mushrooms: Pat the mushrooms dry with a paper towel to remove any excess moisture.
Flash Freeze: Arrange the mushroom slices in a single layer on a baking sheet. Place them in the freezer for 1-2 hours to "flash freeze" them. This helps prevent the pieces from sticking together when stored.
Store in an Airtight Container: Once the mushrooms are frozen solid, transfer them to a freezer-safe bag or airtight container. Label the container with the date, and they should last for up to 6 months.
